I've been in new cars that operate this way, so it can be done.

You don't need to "push again to disengage the starter". You are correct about the current, that's why most kits come with 40 or 60 amp relays in their control module. That allows you to use a very low amp switch and the relay module handles the higher amps in addition to the programming of what the switch presses do.

Anything is possible and I'm also open to commissioning a place to make me what I want as a one-off custom if need be. All the kits out there do everything except for the "push to shutdown the engine, then again to turn everything off". Most just turn everything off and I'm trying to avoid that.
