I think that now with the trans rebuilt that your discription of the the "trans floating" is you Carb not responding with the needed fuel and or pump shot at a given rpm above idle.

Read up on adjusting a Holley accelerator pump type set up.
One big detail that tons of folks miss in terms of that is whenever you adjust the idle speed, the accelerator pump needs to be re-adjusted all over again.
