In general stroke gets you torque you can buy longer stroke crankshafts that will fit your 389 adjust piston dish as required for any given head and you dont need any whiz bang heads for cruising torque
You can meet your goal without alot of new parts that do not go hand in hand with a normal stock rebuild You could fret dish piston cost but your not buying a whole other 455 engine either You could fret the cost of the new crank to fit your 389 but your not buying a 455 crank then having it machined All this is depends on your 389 not already being bored out max .

I would not bore a 66 389. As in "at all". They cracked with std bores.
