I start with each one 1.5 turns out from the seated position. With the engine running, turn one in slowly until the engine stumbles, then slowly back it out until the engine cleans back up. Do this for the other side, and then you can repeat it once for assurance. If it wants to go out much further than 1.5 turns, then something is wrong. It could be the butterflies not seating in the end carbs, or something else in the center.

Cam selection, and engine condition will enter into the adjustment. When we first fired my 1964 (restored to original specs), we set the idle at one and one-quarter turns. Didn't have any idle below about 900, and setting them richer didn't help. After 250 miles, idle came down to 750. After 500 miles, idle came down to 600, and I reset the mixture screws to 1 turn. With about 1000 miles now on the engine, it will idle well at 550 in drive the hottest day we have here in Missouri (100+). If you have a larger than stock cam, then look at Old Man Taylor's post.
