I'd try 2 things before deciding to swap heads....first, I'd try richening up the carb a bit and see if that helps. The other thing I'd try would be to switch to a 160degree t-stat if you've not...

If it were me, and considering the engine harness is likely original, which puts it at >50years old....I think I'd just buy a new engine harness.

It sounds like you're doing something similar as I did to my '67 a few years ago. I also went to a Moser 12-bolt rear and switched over the rear arms to GW. Sure is nice to dial in your pinion angle...
