I'm new to this engine. What sort of sealant should I use on the distributor/oil pump housing gasket that would allow it to slide for belt adjustment? This is my first build in about 15 years. Jeez, the prices went UP.

I prefer the spray on tacking type.
This way you can achieve a very thin film Vs a buildup of gasket goo.

I’m sure you already know but remember the larger housing gasket gets tacked to the housing
and the smaller bypass gasket is tacked to the block.
You can also apply a very thin coat of grease on the outward face of the gaskets to help with the slide action,
However if all machined surfaces are checked and cleaned well it isn’t necessary.
