I was assuming it would still be a 2v head considering all the other Sonny's Hemi stuff is. It wouldn't surprise me to see a 3v or 4v configuration though.

I always vacuum bleed clutch hydraulics and have never had an issue. I don't see why it wouldn't work using this method. Z-bar setup may be a solution too, but that puts your master in a high heat...
