There are a couple of books that can help a lot. The Pontiac Restoration Guide as mentioned, " How to Restore your Muscle Car by Greg Donahue and Paul Zazarine, and the 67 assembly guide. While not for a 65 many of the pages are still very similar to 65 and I found them quite helpful. Most important take lots of pictures on disassembly they will be your best guide for reassembly.
