To determine what you have, drain (or siphon) some out into a glass. Put some water in and see if it mixes. If it mixes, you have brake fluid. If it doesn't, you have hydralic fluid. (either trans fluid, jack oil, whatever.) Most original applications through 67 were brake fluid, but you can never tell what has been drained and replaced over the years. Always better to find out, since one doesn't mix with the other.
As far as how much to put in, you'll want to run the top up and down a few times, then run the motor several more seconds after it's down to make sure you get the air out of the system. Then with the top down, fill the reservoir within 1/4" of the bottom of the plug.
