I have 255/50/16's on my car, mounted in 8" 0-offset wheels (GTA Repops), and I run 10" M/T Slicks at the track on 8" 0-offset Weld Pro Stars.
I say you could probably go bigger if you increase the backspacing (move the wheels inboard) about .5-1" depending on leaf spring clearance. The street tires clear the quarter panels just fine, but there's only about 2 fingers worth of clearance on the slicks.
