Here's the combo I have used on both a '63 and '64 Cat.
Front - 15 X 7 Wheel with 225/70R15 or 235/70R15 with 4.5" backset
Rear - 15 X 8 Wheel with 255/70R15 with 5" backset
This results in the maximum size wheel and tire combo you can get in the wheel openings - I run a 30 X 9 Goodyear Radial slick on my 2+2 drag car, but wouldn't go any taller than 29" (255/70R15) on the rear for the street.
The problem you are going to run into is finding custom wheels with the backset you need. Torque Thrust II's can be ordered in any backset and Wheel Vintiques will make a custom chrome GM ralley in any backset. Beyond that, there's not much out there for us 5 X 5 bolt pattern guys.
One word of warning - check the dimensions of your particular car before you buy, because there is quite a bit of slop in the body mounts (body can be shifted to one side or the other or fore and aft), and your springs better be good.
