I'd use heads that flow around 240-250cfm intake @.500" lift on a 400/428/455 with forged rods and lightweight pistons and anti-pump up lifters with the recommended springs.
Coverter/trans and rear will depend on the size of the engine you choose, if a 400 I'd go for 3400rpm converter with 3.90's, if 455 a 3000rpm converter with 3.55's and if 428 somewhere in between (3200rpm with 3.73's?). You will most likely be going over 6000rpm in any of those engines, so make sure the oiling system and bottom end are in good shape.
