Phil- Hate to say this, but I think you were a big part of the problem. You should have taken a careful look at the manifolds that you bought, and you would have noticed immediately that one of them requires a two-bolt head pipe flange, and one requires a three-bolt. For those of us who have done this before, this setup is common knowledge.
So, you need one of each type of flange. As for hardware, the attachment of the pipes/flanges to the manifolds is accomplished with studs and nuts- NOT bolts. If bolts are shown or mentioned anywhere, the only possibility is that these would be used to attach the manifolds to the heads.
Just take your time, look things over carefully, and it will all make sense.
