Running hot when! While idling? crusing down the road at 3000 rpm? at full throttle, or all of the above?
To start off with I would back those idle screws out another 1/2 a turn and for now live with whatever idle that gives you.
Also where their any other changes made in the process of changing carbs, like anything with the distributor timing of vacume advance? No vacume advance or retarded timing will make the motor run hot real fast, as will a small vacume leak!
