Ditto on the dish, you'll be sorry if you don't. Also agree in regards to the cam, go bigger, as well as the XE grind (if you're going Comp).
Valves, yes, go SS, and the Ferreas are 'the' choice in my opinion. Do the heads right now and save yourself grief later.
I say leave the seats alone unless they're damaged. Clean-up/cut is fine.
