I drain the water out of the block by pulling the lower radiator hose off the block. Gravity takes care of the rest. Just have a drain pan underneath to catch the water if your concerned about that. By the way, if you were willing to pull the engine to deliver to the machine shop, why not pull the engine and swap the cam yourself. As stated its very easy to do with the engine out of the car.
