From the white seats I had in my daily driver 63 GP, and black interior on this 66 GTO.... neither are easy to keep looking super good or new. Yer gonna work at it whether you like it or not.
Both get hot from the sun, but white shouldn't be as bad as black. So go with what you want Rich and enjoy it.... it's your car.
