I've painted the engine without removing as well. You're right, you can't get to everything, but you can certainly get to everything viewable when the hood is up.
I used a spray bomb -- carefully masking everything. Get the car jacked up and you can get the oil pan, etc.
It's not a perfect job but it certainly beats looking at chevy orange
