190 degrees is a goal temperature that most GTO owners would be pleased to attain. My '64 regularly runs at 220 on the highway at 80mph, then cools down to 190 as speed decreases.
On my '66 back in the 80's I chased vapor lock the entire time I had the car. An electric fuel pump was my only bandaid.
