Your question is all about the short-block. OUR answer will be based in your intended application. Being a Convertible doesn't decide 350/400. But the rear gear may.
If a 2-series (2.73:1, 2.54:1) then 400 engine. If 3-series (3.08:1, 3.23:1) then 400.

Seriously though, I would say the 400 as well. Use the biggest/best of what you have IMO.
