The 7.3 Ford is probably the way to go. Excellent motor and reliability, good chassis to work with as well. The only weak point is the E4OD transmission, but once rebuilt (100K miles) it should be good to go.
You don't want a 90's GM diesel, they're ok, but not in the league with the PowerStroke.
