If you are going with a cloth int, a tweed or something, the gray will look nice and be more comfy. I'd use a later model front sent too like I did on my 61 Safari. Get something out of an 80s or so Buick, etc. Something with a split bench with recliner. You will be happy you did.
Safer with headrests too.
Have you thought about belts/should harnesses?

I used '69 era belts/harnesses and wellded mounts to the B pillar for the shoulder belts. It works well.

'62s have no safety equipment-
think about
head rests
shoulder belts
disc brakes
dual master
as minimums.
Gotta take care of those loved ones you know.
