Born and raised in SE Texas and have lived there, Dallas, and San Antonio and traveled the whole state. I would agree with those who are recommending the Austin/San Antonio/Hill Country (ie Fredericksburg, Kerrville, Boerne, etc. areas) areas. This will make the Galveston people mad but IMHO Corpus Christi is a much nicer site on the Gulf of Mexico although Galveston does have it's charms.

Corpus has nowhere near the family attractions that Galveston has, but the surf is better and the water can be clearer certian times of the year. JMO

If it were just adults, Austin would be the way to go. With children, San Antonio and Galveston are far better....
