You really can't choose a cam until you find out more about the engine. Do you know the previous owner, or can you get in contact with them or whoever built the engine?

Worse case, you may have to remove a head, but if you're planning on doing a cam, that isn't too bad. If you discover a large chamber, you can rectify (to some degree) and then you can properly choose a cam for the engine (with the correct CR).
