What is your intended use for the car? I'm assuming mostly street use?
I'd go for a tight 2500 stall. I've had good luck with the Hughes GM25, others are going to recommend a Continental, but they're a bunch more money. Hughes has a BOP version of the GM25 that's built for the torque characteristics of a Pontiac. I ran one for years- it drove like a stock converter in normal driving.
Stay away from the off the shelf stuff from TCI, B&M and the like- they are way loose for around town driving.
