The dash/instrument removal is not that bad in the '68. You just have to know where every screw is before you start tugging on that 45 year old piece of brittle plastic.
For things like that, posting in the '68/'69 A-body section will get you plenty of instructions and a few pics to go along with them.
Like they've said, pick one problem at a time and knock it off your list.
