Mainly because it is almost dimensionally the same and weighs the same as a flathead Ford V8. It was easy to find in the junkyard starting back in '55. A stock 2-barrel 1955 265 Chevy V8 made 162 HP, about the same as a heavily-modified Ford flathead V8.
A small-block Ford is longer and narrower, not as good a fit. You rarely see a 260, 289 or 302 in a '30s Ford, they simply are too long.
