That is quite the project. I have been there and know what you are up against. If I lived closer, I would definitely come over and drink your beer and watch you work!
What are you using to lift the body? 2 cherry pickers?
As far as the underside, if you are not planning on removing the undercoating, I would power wash it to get the grease off and then hit the underside with a light coat of under coating to make it all look uniform. Use the 3M stuff and it comes out real nice.
Don't get squashed under the car.
