It's details like this that matter. That and... are you using a mechanical water pump?
If the temperature climbs in the staging lanes (after you shut down the car) it's because heat transfer doesn't just stop real sudden like.
If you're worried about this "phenomenon"... well, aluminum heads just make it worse.
