The plate within the jamb does move but just a bit for door alignment, it will not fall down.
You are far better off leaving hinges on the door.
You don't have to remove the fender, but would need to remover any rocker molding/trim and tape the edge of the door and fender so as not to chip the paint. Then just loosen the upper bolts and remove the lower on the dogleg and use a short block of wood to hold the lower fender out to access hinge bolts. A long handled S wrench works best. Just take a look in the Fisher Body Manual and it will show you the full details.
I even went as far as making a cradle that fit into/onto my floor jack to hold & support the door while doing this.
