Here's thread featuring a car that surely weighs in very close to the '69 GTO that is the subject of this thread, running solid 11.40s (best run 11.3893 at 120.63 MPH with a 1.6802 60ft) with 109 less cubes and about 150 less HP using a 3.08 gear:

I wouldn't hesitate to run a gear somewhere between 3.00 and 3.25 (Ford 9"), leaning towards the taller gears.
No need to spin that big 4.75" stroke excessively while enjoying a long drive, I'd be willing to give up a tenth or two at the track to enjoy a lot of cruising into the sunset during my retirement.
