Sounds like a great approach, JT. One step at a time.

I think even before you make the first change (rear gears), I would answer two other questions...

1. What type of driving do I plan to do most of the time? More Highway, or more City?
2. Will I take the plunge for an OD trans someday, or is that unrealistic?

These decisions will help determine what gears to switch to (your step 1).
