Like you said, big mistake. It's not always easy even when you document because you'll always miss something or lose something.
Factory assembly manual would help somewhat but I've never seen one for the 66? I have seen them for '67. In that case, you may find the part numbers for some of the bolts, screws and clips but then you'd have to have access to what those part numbers go to.
Someone on this forum who has one torn down and DID take pics and bag the parts or a parts car as mentioned above would probably be your best bet.
Start a thread in the '66-'67 forum and ask for help. Someone has one torn up I'm sure.
I'm going to try to pull, at least, the doghouse off of mine this summer but it'll be a while.
The '67 manual is close enough that it would be worth having. I'm going to get one myself.
