I figured out how to get it to open the entire file, not just the first 500 points.
Open the datalog in Excel.
Save as: Text (tab delimited)
Find the new file and rename from "dashboard.txt" to "dashboard.msl"
If you can't see the file extension (.txt, .CSV, etc), go to the Control Panel in Windows, find "File Explorer Options" and uncheck "hide extensions for unknown file types"
