I have collector insurance thru Grundy on my 67's, but they aren't "allowed" to be daily driven per the policy. There is no annual mileage limit as others have mentioned, but they rarely get 5,000 miles per year each anyway. I do use them on occasion when my 71 is down for repairs, or perhaps when I need to haul something with the wagon, but those times are temporary in nature.
The 71 lives on our Farmer's policy with the rest of the family driver cars. No limitation on usage that way. Granted, I cannot get an "agreed value" policy for it as a result, but that's the risk you run.
Incidentally, I have to tune it to pass emissions every year as well since I live (and register) in metro Phoenix. Everything 1967 and newer has to pass emissions here if it's not on a collector policy. Not a big deal as the car is almost bone stock, so with a good tune, it flies thru emissions.
These are the practicalities of running 'legally,' and daily for me. Still, it's 100% worth it to be able to hop in the car any time and any day and drive when and where I want.
And I do.
