I do the water on the stove routine, just like Mr Dan W told you, except I have a digital Steak Temperature Checker that is right in my kitchen and I can plot the temp curve easily as the water is calm as that opening temp is below the boiling temperature.
Stant Thermostats seem very consistent when I have checked them for friends, and I
need to check one for my 455 E-Head build in process.
