Any good upholstery shop can do this, the real problem is if they care to get the seams right like the factory did it if that matters to you. Most replacement tops from years ago were just one giant piece or seamed up the middle, the factory tops had 2 seams, one on each side. Not a big deal on a driver when these cars were 5-10 years old, but on a high dollar restoration it's obvious to see when done wrong.
And yes, SMS will get you the right material the factory used. Just make sure you paint and seal that roof before you put one back on!!!
