The 500 mile trip in itself would be a great opportunity to continue the break-in process. I like to drive local hops just to insure that all the bolts and clamps are tight, but once the integrity of the engine has been confirmed a proper drive is great to continue the process. Basically you want to avoid idle conditions and if at a light you simply drop it in neutral and keep the RPM's up a bit. Avoid lugging in overdrive and keep the cruise RPM up in a comfortable range. Coasting down for a few seconds in gear every once in awhile helps also. You just really want to avoid low RPM, lugging, and constant speeds.
