Like mentioned in one of the post. (#49) Slow down.
Focus on getting the cam degreed and do some turning and setup your timing from there.
Leave your heads and intake alone. You can try the 800 cfm Q-jet see how it works. Electric chokes work fine for what your doing. The only issue I ever had with a Q-jet was keeping the fuel bowl full at higher rpm, but that was in my fuel system delivery.
Down the road you can build yourself another engine with more H/P and performance if that's what you want. There are lots of smart folks on this forum who can help guide you in a future build.
