A stock 350 HO would have had a number of cam possibilities depending on how the car was spec'd. 067, 068 and 744 as far as I'm aware.

I know you want this thing to sound radical, but I think the prudent thing to do right now is to simply put your good running 350 HO in the car. You'll still be able to enjoy the car while you save for your next engine.

And, if anyone ever asks, you can tell them exactly what you just told us. You lost the previous engine and you're up and running while you build a new one.

I like Poncho's in between the frame rails. I'd find that 455 and build it. I'd only do the LS if I was trying to maximize selling price with the intent to sell.
