I don't have an engine like yours. However I'd say that's a good temperature for a modern engine with tighter oil clearances and ptw clearance as well. The interesting thing will be to see if that nice air induction system you built is supplying ambient temps, or a reasonably close to it, to the intake. If so I wouldn't change that engine coolant temp setting and you should have the best of both worlds. IMHO
