First off, McDonalds and In & Out do NOT sell French fries--They sell shoe string fries, and shoe string fries are cooked differently than French fries. Second In & Out has terrible cooking oil which makes the fries taste like cardboard.

Second; Steak fries are NOT Steak fries at all. They are called CHIPS. How many times have you been served Fish and Chips and got shoe string fries instead?


Third; French Fries are 1/4" X 1/4" and they and CHIPS ( 1/4" X 1" ) are cooked differently than shoe string fries. The secret to making real French Fries is twofold. It must be the proper oil, and there must be TWO, NOT one fryer. The first fryer's oil is very very hot and the fry or the chip goes in for just about 5 seconds and this puts a crust on the potato. That crust will not allow oil from the cooking 2nd fryer to penetrate the potato ( it just cooks it from the out side ). First test; When the fries are done they should stand straight up like a hard on and not like someone who needs Viagra. Now the second test; When the standing fry is broken in half the inside is nice and fluffy and not mushy.


FYI; the French Fry was invented by the French speaking people of Belgium and they are the ones who perfected them with the TWO Fryer system.

If your favorite restaurant is not using two fryers they are not making real French fries.

Fries served at the AllStar Diner in Sylvan Springs Alabama. A local meat and three that also serves a great burger or BBQ. The fries are dumped out of a bag (yes) and cooked fresh with each order.

Could they have been Belgian fries all along?

The important matter at hand is this: If the French-speaking Belgians who "invented" French Fries (do I really need to capilaize the F?) were making sure every Fry was exactly 1/4" x 1/4", that would mean they were using English rulers. Just imagine! I bet they were secretly protestants who fled the country, and thus weren't French at all. Furthermore, they likely made them out of desperation when their new neighbors learned about their indescretions and stopped sharing the good waffles with them. Those same Belgian patriots immediately invented waffle fries just to spite the renegade piggies, and we all know the waffle fry is the highest form of the art.

Short version, your whole theory is whack.

That said, I'm glad those traitors to the Crown and the Papacy were so well-provisioned with extra fryers and plenty of oil. If all you can get is potatoes, you have to get out your smuggled ruler and try your best.

It's not my story, it's the facts. You cook them in tallow, no one does that here anymore. You cook them twice, no one does that here. And they have a cutter that cuts them 1/2" X 1/2"

Although they cook them in refined peanut oil, but if you didn't realize it, 'Five Guy's' does a multi-step cook;
they blanch ("cook" in water);
then they pre-cook;
then are cooked to order.

man..now i want some chicken..and theres NONE in Kansas that can hold a candle to it..and Kansans..I KNOW about our famous chicken joint....it just isnt the same....

Nah, the Chicken House in New Albany, IN (County Line Rd and County 311). Some of the best fried chicken I have ever eaten( well, next to my maternal grandmother’s).

Beef tallow or Duck tallow? Not that it really matters, but you can buy either through US Wellness Meats if you want to make your own!. I order all my grass fed/finished beef, pastured chicken & pork, etc, etc from them.

Haven't eaten fast food in decades, but I used to LOVE Arthur Treachers chips with the malt vinegar sprinkled on them!

I never had Five Guys, but I guess some famous or infamous guy likes them! LMAO
