Pontiacwoman, I wouldn't even think of changing that interior. The reproduced interiors are nice but they just don't have the look of the original. The patina can't be faked.
My two favorite interiors are white and black. Love them both but if I had an original interior of any color in that condition, I'd keep it....Especially if it were white.
Also, consider Nightwatch, Fathom Blue or any very dark, metallic blue. Looks incredible with a nice white interior and adds that attitude that you seem afraid of losing with the white interior.

Beautiful car but that dashpad would drive me crazy with a constant reflection in the glass on sunny days.
