Default Good Operating temp

I have a 1977 Pontiac 400 out of a Firebird. It seems to run hot. The timing has been set and it seems to climb up to about 210 degrees. What temp is too hot for operating?

It has a freshly cleaned radiator, new water pump and 180 degree thermostat.
