Default 55 Gasser

I have been thinking about doing an old school style gasser for a while. There is a shop in town that does some amazing work (original Detroit old school machinist for the OEM's) building this type of car. Attached are some pics of a car that looks to have a decent start. Anybody have any advice/experience doing these? I want something that is safe, can cruise the highway (no interstate speeds), and possible blast down the strip ever once in a while.
