I have a '67 hardtop Goat (Montreaux Blue on blue interior, black vinyl top) that I restored to how it was exactly when it was driven brand-new out of the dealership. My vote for you is to go with the original paint, interior and exterior. That Champagne color is really rare, there were ZERO cars with that color at the GTOAA national show last year in Portland. I've been into the GTO hobby since '96 and I've still never seen a champagne GTO, Tempest, or LeMans. One thing you could do to give it some variation from pure stock is to (as I mentioned), paint the interior the stock champagne color, but do everything else (seats, carpet, door panels, dash-pad, etc) in black. That would look pretty cool IMHO. Another variant you could do with the black/gold interior I mentioned above would be a black vinyl top. Another way you could go is to paint the interior the stock champagne as I mentioned earlier, but go with parchment seats, etc., and a white vinyl top. If you replace the window cranks, do not trash them. Someone will want them for sure no matter what the condition. Good luck! Looks great so far!
