One thing that kind of caught my eye is that the temperature sending unit is on the manifold and not the head.

Yes, you are right. The 72-only vacuum temp sender unit should be in that spot and the guage temp sending unit should be in the left cylinder head (which currently has a screw in plug in that spot)
