You tried to support a body on a 4x4 in the middle of a piece of 1/2 particle board. The saw horse didn't really fail, it had too much load over too small an area. If you had a 2x6 on top of that particle board to spread the load out to the steel it'd probably still be holding, but certainly not stable.
