driver can cut a great light and their crapbox runs consistently is not racing.
Actually it is.

You are the one NOT racing?

There is a big difference between racers and spectators.
Drag racing is probably the only motorsport that anyone can do.
(hard to do dirt racing on the paved roads?)

Because one doesn't like watching it, maybe they should try participating?

According to the definition it isn't.

RACE
/rās/
noun

1.
a competition between runners, horses, vehicles, boats, etc., to see which is the fastest in covering a set course.

Wonder why this doesn't mention throttle stops and breakouts?

I love racing. I do race. I've raced go karts, RC cars, dirt track cars, and drag raced. (not to mention forkilfts at work, wheelbarrows, pallet jacksm bicycles, motorcycles, skateboards, and lots of other stupid stuff). When I go to test n tune night with my friends or finding guys to grudge race - that is racing. My low 11 second Camaro is slow compared to a lot of cars, but I race it against other slow cars to see who's fastest. I'm not discounting the skill of bracket guys, but IT IS NOT RACING. I'm sorry but it's not. It is a not a competition of speed. Two 17 second cars actually competing to see who faster is a race, even though they are terribly slow.

It is true that I have never "competed" in a race where I've lost for going too fast...
