I have a 68 and a 69 hood tach. The 68 has black, pink and white wires going into the tach mechanism. The 69 has just black and brown wires. I assume the black wire is ground and in the case of the 69 the brown wire should go to the negative side of the coil. I don't know about the 68. Anybody know how to wire these things up? I can't get either of them to work!

Try looking in the book GTO Restoration Guide by Paul Zazarine.

I believe there is a detailed section on it in that book. Good luck. I remember the book noting that a lot of people hook it up incorrectly in the '69 goats. One year has it wired to the starter's power line while another year is wired to the firewall. I may be mistaken though. It has been years since I have read that section and I don't have the hood tach (though I am interested) on my '69.

According to the 68 Pontiac Service Manual, on the 68 Tempest/LeMans/GTO the black is ground,(like you said)- they say there's a black with a double pink stripe that goes to the neg. coil terminal, and the grey (possibly your white wire?) goes to the "lamps" terminal on your fuse block for the light. they also show an in-line fuse in the double pink stripe coil wire.

On a 68 Firebird, they show a black (ground) wire, a brown (neg. coil terminal) wire with a fuse, and a grey (fuse block) lamp wire. I would guess that if you have just a black and brown wire, it's an unlighted tach.
